Fat Tuesday: Skinny Cake

Happy Mardi Gras! Are you planning to celebrate? I think I may throw beads at my HIIT class participants for burpees completed, what do you think? SHOW ME YOUR...BURPEES!

To celebrate, Fat Tuesday, I wanted to share my newest obsession: Chocolate Protein Cake. Carla from MizFit shared this recipe on her blog, and I had to try a version of it. 

Here is what you will need:

1 TBSP of chia seeds
1/4 c. egg whites
1 [heaping] tsp. of cocoa
2 TBSP of canned pumpkin or applesauce
1/4 tsp baking powder
1/2 tsp cinnamon
1-2 drops of vanilla extract
A microwave



I adapted the recipe a bit, and you can make modifications to your liking. Combine the dry ingredients, then add the rest, mixing thoroughly.


Heat 70-80 seconds on high in the microwave, depending on how "done" you like it.


Use a spoon to pull the cake edges from the mug and flip onto a plate for serving. Garnish with dark chocolate chips or more cinnamon if you choose.

This totally satisfies my sweet tooth, and I'm adding more protein and healthy omega 3's to my diet.

In the picture below, I actually was trying to cool off my bite of chocolate, not make-out with it!

  10. That looks awesome. So did you trade out the applesauce for pumpkin??

    I actually lived in NO when I was very young. We celebrated Mardi Gras while we lived there, but I was like 2 so I don't really remember. But we had a huge box of beads and other stuff forever that I used to go through and wear all the time as a kid. I always loved all the fun stuff in the box.

    Yes, I actually lived in New Orleans for a few yrs so I got to witness Mardi Gras first hand. Such a blast and I miss the city, people, and lifestyle more than you can imagine.

  13. Mmm, looks SO good!

    Yes, we usually celebrate in New Orleans every year, but my husband's work schedule didn't allow it this year...we have TONS of family there, so my mom was able to go and bring the boys back some really cool beads, a Saints football and some really cool Saints beads...very cool! next year we'll def be there but it'll be crazy because they host superbowl at the same time :(

  15. i am obsessed with cake!!!!! this is so perfect for me! although i must admit...i count down the seconds every day until I get another no bake protein bar that i made using your recipe :)

    one year i was in New Orleans the day after Mardi Gras...it was still seriously a blast. love it!
