Let me catch you up on my Wednesday. Colon cancer runs in my family. Being that I'm in my 30's, I had a colonoscopy done Thursday as a preventative measure.
So, really the title of this blog post should've been, "Things that go up my butt".
Any hooters, I had to chug this lovely electrolyte solution on Wednesday evening. 4 liters of absolute disgusting liquid. I started having gag reflexes once I looked at it. Sick. It's meant to clear you out.

All was clear and I'm set for 5 years. After a liquid diet on Wednesday, I was hungry for real food.
What you will need:
Pizza or Spaghetti sauce
Lots-o-Veggies
Mozzarella
Pre-heat the oven to 400* and add sauce to tortilla on a cookie sheet. You could cover the sheet with foil for an extra crispy crust.
Add veggies (I used broccoli that had been roasted and spinach) and a light amount of cheese.
Bake for 10-12 mins depending on how crispy you like your "crust".
The tortilla is only 80 calories plus sauce, veggies and cheese, so this number is easily under 250 calories.
Be prepared to share with your best buddy, though.
This would be a perfect option for Superbowl Sunday when temptation will be surrounding us! But, indulge a little, especially if you've been good all week.

- I'm not a big NFL fan, so I like the excuse it provides for another get together and checking out funny commercials.

ReplyDeleteThat tortilla pizza is a great idea, and for vegan folks, a little Daiya cheese would be perfect.
So, do you cook the broccoli before baking it on the pizza or just throw raw brocolli on there. I am seriously making this tomorrow night. I have all of the ingredients!

ReplyDeleteI'm glad all was well! I eat a small tortilla pizza and a smoothie everyday for lunch. Kind of boring, but I love pizza, so this is the healthy way to go! : )
ReplyDeleteMy parents did a couple's colonoscopy, as in they had them done in the same afternoon. Apparently its very common because its the only way some guys will go in and have it done.
ReplyDeleteI had to be the one to drop them off and pick them up. yes, I had to tell my boss that I needed a half day because my folks were having a colonoscopy date. No, he did not ask questions.
Four liters of that stuff! UNBELIEVABLE! Glad everything is OK though.

I don't watch football and we aren't going to any parties, because I'll be at work. So I'm a party pooper! But, my favorite party treats are hummus and artichoke dip, I love veggies and dips!!

Ah, the colonoscopy. I had my first done a couple months ago. Thanks to the Dr., they hooked me up with some Suprep...free. Otherwise I could've done to jug or bought Suprep for $80+. I was going to buy the Suprep even if they hadn't offered the free one. Seriously.

As for the Super Bowl. We don't have/go to a party so no worries on munchies there...although I love me some salsa!

yum! Such a good idea.. I'm going to remember this recipe. I'm like you.. the shorter the ingredient list the better! oh man, I hear your pain about the colonoscopy. They are brutal but that liquid is even worse. I had to go on a liquid diet for two days before mine and the drugs they used to sedate me made me feel drunk for 3 days. Glad to hear all is good with you though :)

The pizza sounds great!! I am a sucker for pizza and I am always trying to find ways to make it healthy! Ugh a colonoscopy, I so need to get one of those done but I just don't have the guts.. ha ha !
