Keep It Simple in the Kitchen

As I've mentioned before, I'm more comfortable cooking when the ingredient list is short and instructions simple.

Veggie Quinoa Stirfry

More than 5 ingredients confuses me.

What?!

After work, I either teach HIIT & spinning classes or take Cooper for a walk, so I'm ravenous (may be a bit exaggerated) by dinner time. This time of year, Coach's schedule is chaotic with practice and soon-to-be traveling, so often I'm on my own.

Fast and easy, please.


Cook veggies (broccoli & slaw, snap peas, carrots) on medium heat in minimal olive oil. Bring 1 part quinoa to 2 parts water to a boil, cover and simmer for 15 minutes.


Add 1-2 TBS of the teriyaki sauce to the veggies + quinoa mixture. Then, top with chia seeds. C'mon, you know I'm obsessed with these mini nuggets of health.

20 minutes or less, dinner is served. And, lunch the next day. The chia seeds add a bit of crunch to the meal and lots of benefits. Did you see the latest edition of Runner's World?



Chia is the richest plant based source of omega 3's, protein, dietary fiber and antioxidants (source). It helps to keep your blood sugar levels even and lowers cholesterol.  More recipes for using chia in your diet found HERE.

Or, you can just add it to your cereal if you don't feeling like baking.

What was the last book you read?
--I just finished Cutting for Stone. A story of a set of twins who began life orphaned by an Indian nun and Brittish surgeon. Scandalous, huh? Such a riveting story, highly recommend it!  I'm onto Unbroken now.

  6. I just finished "Nujood Age 10 and Divorced." Really good book, quick and easy read, though obviously the subject matter is hard to take in. I think it's an important book because we often forget about how lucky we are and what is going on in other parts of the world.

  8. I just discovered chia seeds about a month ago and now I try to sneak them into a lot of foods. My husband is always saying "did you put chia in this?! you don't have to put it in everything" :)

  9. I love your giant container of quinoa, and we love to throw chia and flax seeds into every single meal! Just finished reading Swamplandia, and my father-in-law just recommended Cutting for Stone. We have twins, so I'm obsessed with anything twin-related.

  10. Looks tasty! I love simple meals that are healthy and reheat well! I really want to read Cutting for Stone - heard great things. I am just about to finish Crash Into Me and it's an amazing true story about the author who was raped as a freshman and is contacted by her attacher 20+ years later.

    I love chia seeds, such a great nutrient! And I read Cutting For Stone a few months ago and really enjoyed it.. scandalous indeed :)

  17. Oooo, I could actually make this, it has fewer than the max 5 ingredients you also like :). I am not the world's best cook, I admit it and I'm okay with it! :)

    I read somewhere that you do not get the perks of Chia seeds unless you actually get inside the kernel and it's very hard to get the exact extraction. I buy ground chia seeds, but I'm guessing these are too grounded. I have no idea.
